Thanksgiving Dinner


Menu

Step-by-Step

Seven hours before dinner:
1. Bake pumpkin pies

Five hours before dinner:
2. Start turkey

Two hours before dinner:
3. Make apple sauce
4. Prepare sweet potato casserole
5. Prepare mac & cheese
6. Slice cranberry sauce

One and half hours before dinner:
7. Uncover turkey and start spraying it every 15 minutes

Twenty minutes before dinner:
8. Take turkey out and put sweet potato casserole and mac & cheese in the oven
9. Prepare mashed potatoes
10. Cook vegetables
11. Prepare stuffing

Five minutes before dinner:
12. Warm up gravy
13. Warm up rolls
14. Carve turkey


Recipes

Pumpkin Pies (2)

Ingredients:
1 1/2 cups sugar
1 tsp salt
1 tbsp pumpkin pie spices
4 large eggs
1 can pure pumpkin
2 cans evaporated milk (Carnation)
2 9-inch deep-dish pie shells

1. Preheat oven to 425 degrees.
2. In a large bowl, beat eggs.
5. Add pumpkin, sugar, salt, and spices.
6. Add evaporated milk and mix well.
7. Pour into pie shells and bake for 15 minutes.
9. Reduce temperature to 350 degrees and bake for another 50-60 minutes, until fork inserted in center comes out clean.
10. Let it cool for two hours and serve with vanilla ice cream.


Turkey

Ingredients:
Turkey
Butter
Salt and pepper

Serving Guide
8-12 lbs will serve 6-8 people; roast for 3-4 hours
12-16 lbs will serve 8-11 people; roast for 3 1/2 to 4 1/2 hours
16-20 lbs will serve 11-13 people; roast for 4 to 5 hours
20-24 lbs will serve 13-16 people; roast for 4 1/2 to 5 1/2 hours

Defrosting Guide
8-12 lbs: defrost in fridge 2 days or in cold water 4-5 hours
12-14 lbs: defrost in fridge 2-3 days or in cold water 5-6 hours
14-24 lbs: defrost in fridge 3-4 days or in cold water 6-7 hours

1. Preheat oven to 325 degrees.
2. Remove wrapping and take out giblet packet and neck from cavities.
3. Rinse turkey with cold water, drain and pat dry.
4. Place turkey breast side up in a roasting pan.
5. Rub turkey with butter, salt and pepper.
6. Add 1/2 cup of water to the bottom of pan.
7. Cover with aluminum foil.
8. Roast until inner thigh temperature reaches 170 degrees.
9. One hour before done (see timetable above), remove aluminum foil and spray with cooking juice every 15 minutes.
10. Let stand for a half-hour before carving.


Sweet Potato Casserole

Ingredients:
6 small yams or 3 large ones (enough for 3 cups mashed)
1/4 cup brown sugar
1/2 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1 1/2 cup mini-marshmallows
1 tbsp butter
1/4 cup cream

1. Preheat oven to 350 degrees.
2. Peel, dice, and boil yams until easy to mash, about 20-30 minutes.
3. Mash yams until smooth.
4. Add all other ingredients except half of the marshmallows and mix well.
5. Pour in baking dish and add remaining marshmallows on top.
6. Bake for 20 minutes or until marshmallows melt and turn golden.


Apple Sauce

Ingredients:
12 McIntosh apples
1/2 cup sugar
1/4 cup water
salt

1. Peel and slice apples into a medium saucepan.
2. Add all other ingredients and cook for 15 minutes or until easy to whip.
3. Whip until smooth.




Baked Mac & Cheese

Ingredients:
1 box macaroni (or any other kind of pasta)
4 tbsp butter
4 tbsp flour
1 cup milk
1 cup cream
2 cups shredded cheddar cheese
1/2 cup bread crumbs
1 tbsp butter
Salt and pepper to taste

1. Preheat oven to 350 degrees.
2. Cook macaroni until tender, about 10 minutes.
3. Drain and set aside.
4. Melt 4 tbsp butter in a large pan.
5. Add flour and whisk until well mixed.
6. Add milk and cream and cook for 10 minutes, mixing often using a whisk.
7. Add cheddar cheese, salt, and pepper, and cook for another 5 minutes.
8. Add cooked macaroni to the cheese mixture and mix well.
9. Pour macaroni mixture into a baking dish.
10. Meanwhile, melt 1 tbsp butter in a measuring cup, about 20 seconds in the microwave.
11. Add bread crumbs to the melted butter and mix until coated.
12. Sprinkle bread crumbs on top of the macaroni
13. Bake for 20 minutes.


Mashed Potatoes

Ingredients:
12 potatoes
1/2 cup milk or cream
4 tbsp butter
Salt, onion salt, and pepper to taste

1. Peel, dice, and boil potatoes until easy to mash (about 20 minutes).
2. Mash potatoes.
3. Add all other ingredients and continue mashing until smooth.


Vegetables

Ingredients:
1 can corn
1 can cut green beans
1/2 bag baby carrots
1 tbsp butter
Salt to taste

1. Boil baby carrots until tender, about 10 minutes.
2. Drain corn and green beans and add to the baby carrots.
3. Cook until warm, about 3 minutes.
4. Drain, add butter and salt, and serve.


Stuffing

Ingredients:
1 box stuffing (6 oz)
4 tbsp butter
1 1/2 cups water

1. Bring water and butter to a boil.
2. Add stuffing and mix until coated.
3. Remove from heat and let stand for five minutes.
4. Fluff with a fork before serving.
